Juicy mushrooms stuffed with ground beef, jalapeños, onion, mozzarella, and Smells like Meat Spirit BBQ rub, wrapped in bacon and smoked over cherry wood.
Mix the ground beef thoroughly with the jalapeño, onion, and rub. Gently fold in the cheese at the end.
Remove the stems from the mushrooms, fill them with the meat mixture, and carefully wrap each mushroom with half or a whole slice of bacon, depending on size. Secure the bacon with a toothpick.
Cook over indirect heat at around 180°C until the internal temperature reaches about 70°C. Depending on the size of the mushrooms, this takes about 20–30 minutes.
Serve with aioli, sriracha mayo, BBQ sauce, and fresh cress for extra flavor.
