Chili Cheese Ribs

Ingredients for 4 servings

  • 4 spare ribs
  • "Korn to Rock" by Rock'n'Rubs
  • Apple juice in a spray bottle
  • BBQ sauce for glazing
  • 150 grams grated cheddar cheese,
  • 2 jalapeno chilies, thinly sliced

Preparation

Simply prepare your ribs using your tried-and-true favorite method.

We used beautiful loin/cutlet ribs, seasoned them with “Korn to Rock” after removing the silver skin, and smoked them with cherry wood at 130°C for 5 hours (spraying with apple juice from time to time) until they were tender. At the end, we glazed them with BBQ sauce.

For perfect Chili Cheese Ribs, cut the ribs into individual pieces first. Then push them back together, carefully place them back on the grill with a large spatula, glaze again with BBQ sauce, and let the sauce thicken briefly. Sprinkle the cheese over the ribs, add the jalapeno slices, and let the cheese melt with the lid closed.

To serve, carefully remove the ribs from the grill in one piece and place them on a serving platter, topping with extra BBQ sauce. Tortilla chips make a great side.
