Heat a heavy (cast iron) skillet on the grill. Sauté the garlic in a little olive oil, then add salt, bell pepper, and onion, stirring and roasting until nicely browned. Once you’ve reached your desired level of roasting, lower the heat and add the tomatoes. Season with “Paradise City!” and sprinkle the cheese on top, seasoning that as well. Cook for a few minutes over indirect heat until the tomatoes are softened and the cheese has melted. Serve with fresh baguette or ciabatta. Chorizo, salsiccia, or other sausages also pair perfectly with this dish.
