Spare Ribs

Preparation

First, remove the silver skin from the back of the ribs. Then generously rub both sides with “Sweet Rub of Mine” and let them rest for about 30 minutes.

Preheat your grill or smoker to around 120°C (indirect heat) and cook the ribs for about 2–3 hours with a touch of smoke until they develop a beautiful golden crust. Occasionally baste them with apple juice or spritz with a spray bottle 1–2 times during cooking.

Next, place the ribs in pairs on a large sheet of aluminum foil or butcher paper. Add a bit of butter, apple juice, and maple syrup, then wrap them up tightly and seal well. Continue cooking at a slightly higher temperature (around 150°C) for another 1.5–2 hours.

Carefully unwrap the now incredibly tender ribs and collect the juices from the package. Mix these juices with a bit of BBQ sauce, glaze the ribs with the mixture, and let them caramelize for a few minutes.
