Our recipe for Thunder Chili Cheese Sauce, featuring the spicy Southern-style “Thunder Rub,” is quick to make and irresistibly creamy and spicy. This sauce is a must-have for every kitchen.
Preparation:
Melt the butter in a medium saucepan, then slowly stir in the flour and cook until the mixture is lightly browned. Gradually whisk in the milk and heat until just before boiling, but do not let it boil. Add “Thunder Rub,” cream cheese, shredded cheese, and jalapeño, stirring for a few minutes until the cheese is melted and the sauce reaches the perfect creamy texture. Adjust with more milk or cheddar as needed.
The sauce will firm up as it cools, so reheat gently while stirring. A water bath works perfectly for this.
Tips:

Once cooled, the sauce can be portioned, vacuum-sealed, and frozen. Just reheat it in a pot of water and use straight from the bag.

It’s worth experimenting with different cheeses. For example, I like to replace half the cheddar with provolone. Smoked cheese also works great here.
