Trim off any excess fat, sinew, etc., and let it come to room temperature, loosely covered. Season to taste with \u201cThe Winner Steaks it All\u201d seasoning blend and rub it in lightly, then let it rest for about 10 minutes.<\/p>\n<p class=\"p1\">Set up your grill for both direct and indirect heat. Sear the steak over direct heat until you get the desired char and grill marks. Then move it to indirect heat and continue cooking until it reaches an internal temperature of about 54\u00b0C for medium doneness. Let the steak rest briefly before slicing, then sprinkle the slices with a little more \u201cThe Winner Steaks it All\u201d if you like.<\/p>\n<p class=\"p1\">For especially thick steaks, you can also use the \u201creverse sear\u201d method: first cook the steak indirectly until it reaches about 48\u00b0C in the center, then finish it over direct heat to develop those delicious grill flavors.<\/p>\n<p class=\"p1\">Important: If you\u2019re using a Beefer, Sizzle Zone, or other ultra-high heat grill, only season the steak AFTER cooking.
